Family Recipes

Egg Casserole:
8 large eggs
1 can of Rotel
2 cups of cheese
1 cup of water
1 lb of ground sausage
1 tablespoon of all purpose seasonings
3 cups shredded potatoes (1/2 bag of ora ida hashbrowns)

Preheat oven.  Brown sausage, layer potatoes on the bottom of a large casserole dish, scramble eggs, seasoning, rotel and water in a large bowl.  Pour egg mixture over the top of the potatoes,  sprinkle the browned sausage on top of the eggs.  Sprinkle cheese over the top.  Cover and bake at 350 for 30 minutes.  Uncover and bake for another 30 minutes.


Baked Tilapia with Mango Salsa:
1 bag of Tilapia (about a pound)
1 bag of frozen mango
1 lemon
1/4 orange
1 onion
1 kiwi
1 cup of blue berries
salt seasoning
2 cups of brown rice
2 chicken bullion cubes
1 cup white cooking wine
1/4 c olive oil
2 3/4 c water
The Rice
In a rice cooker dump 1/2 onion chopped, rice, bullion cubes, white wine, water, and olive oil.  Turn on and let cook.
The fish:
Cut the lemon in half and squirt over the top of fish.  Add salt seasoning (not Tony's) to lightly season.  Bake at 350 for about 45 minutes or until done.
The Salsa:
Chop up the mango, onion and kiwi, add lemon juice and orange juice and blueberries, stir.
Presentation:
Place rice on plate, put salsa on top of rice, place fish next to it.  ENJOY!

Homemade Granolas:
This is a recipe from Derenda Ropp, and how we have made it our own.  My husband loves these by the way!

GRANOLA BARS

1 2/3 cups of granola cereal
1 2/3 cups of oat meal
2/3 cup of flax meal or oat flour
1 tsp of cinnamon
4 cups dried fruit and nuts (we use 1 prepackaged thing of trail mix and then raisins and blueberries dried.)

2/3 cup of peanut butter

2 tablespoons vanilla
3/4 cup melted butter
1 cup honey
½ cup maple syrup
¼ molasses
2 tablespoons water

Preheat Oven 350.  Line casserole dish with parchment paper and lightly grease paper and exposed sides.

Stir together all dry ingredients.  In a separate bowl whisk together wet ingredients.  Combine wet ingredients, dry ingredients, and peanut butter until evenly crumbly.

Pour into your casserole dish and press firmly to form the shape of the pan.

Bake bars for 30- 40 minutes until brown around edges.

Cool bars in pan completely on cooling wrap.  Cool in refrigerator to prevent crumbs.  

Chicken Paninis:  (Our 30 minute or less meal)
Main Ingredients:
1 lb Chicken, 1 small onion diced,1 bell pepper diced,1-2 packs of  paninis, 1 diced tomato, 2-3 cups shredded cheese
Sauce: 1/2 cup of sour cream, 1/2 cup of barbecue sauce(we use Earth Fare Backyard), 2 Tbs of honey (we use local honey)  * sauce is approximate... we add to taste.


1.  Preheat oven to 350.
2.  Saute chicken with light salt and pepper.  Add in bell peppers and onion chopped.  
3.  Mix sauce ingredients.  
4.  Cut paninis in half.  Open and spread sauce on inside.  Stuff with the ingredients.   
5.  Bake for about 5 minutes or until cheese is melted. 
6.  Serve halves with sauce available to add more.
